Romaine Lettuce, why it's good to eat it and 2 easy-to-make recipes

Romaine Lettuce is nutrient dense regarding vitamin A and C as well as folic acid and ß-Carotene. In addition lettuce is rich in potassium, calcium, magnesium and iron. These are all important minerals for the regeneration of bones and muscles but also for the transportation of oxygen in the blood. It is insignificant in calories and fat, but high in fiber. Dietary fiber keeps your blood sugar levels stable and helps you control your appetite.

Recipe 1:

Sweet and Sour Roasted Romaine Lettuce:

Ingredients 2 tablespoons olive oil 2 tablespoons cider vinegar 1 tablespoon brown sugar 1 teaspoon whole-grain Dijon mustard 1 teaspoon grated garlic 1/4 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 head lettuce, cut lengthwise into quarters Cooking spray

How to Make It: Step 1 Place a large roasting pan in oven. Preheat oven and pan to 450°. Step 2 Combine first 7 ingredients in a small bowl. Step 3 Coat cut sides of lettuce with cooking spray. Place lettuce, cut sides down, on preheated pan; bake 6 minutes. Turn lettuce onto other cut side; bake an additional 6 minutes. Remove pan from oven. Heat broiler to high. Brush lettuce evenly with oil mixture; broil 3 minutes or until browned and caramelized.

Recipe 2:

A crunchy salad with lots of veggies and a creamy Asian style soy dressing. Great for lunches, get togethers or with your next barbecue.

Ingredients: 1 pound lettuce, , thinly shredded 12 oz snow peas, , thinly sliced 1 1/3 cups radishes, , thinly sliced 1 cup green onions, , thinly sliced 3/4 cup cilantro leaves, , finely chopped 2/3 cup sliced almonds CREAMY SOY DRESSING 3 Tbls sugar 3 Tbls white wine vinegar 1 Tbls soy sauce 1 clove garlic, , minded 1/2 tsp ground ginger 1/2 tsp sesame oil 1/4 tsp cayenne pepper 1 cup mayo

Instructions: 1.In a large bowl toss together all of the veggies for the slaw. 2.To make the dressing, whisk together sugar, white wine vinegar, and soy sauce together. Mix in garlic, ginger, sesame oil, and cayenne pepper. Whisk in mayo until smooth and creamy. 3.Mix about 2/3rds of the dressing with the salad. Add more if needed. 4.Add almonds before serving.

Notes You can make this salad ahead of time. Just store the dressing separate, and add when you are ready to serve.
